LIquor-Filled Chocolates

At the Manufacture Cluizel the process of making liquor-filled chocolate bonbons is handmade and involves a high level of craftsmanship. The first step is to create a crust of sugar filled with the liquor. To create the crust, you need a tray of very dry cornstarch in which you will shape cavities. Then you will fill them with a blend of syrup and liqueur. When the crust is finally created by the natural crystallization of the sugar, you will then carefully remove the starch and enrobe them with a tempered dark chocolate. At Cluizel we use our premium dark chocolate Vanuari 63%.
One of the best things about liqueur-filled chocolate bonbons is the variety of flavors that are available: calvados liqueur (apple), Quetsch (plum), Kirsch (cherry), Strawberry liqueur, Cognac (grapes), Rhum, Whisky and Cointreau (orange). For example, our “yellow” chardons are made with Mirabelle liqueur, the “pink” ones are with Raspberry liqueur and Williams pears are “green”.
